Eggs with Cream Sauce

2 – eggs
1 homemade pretzel sliced in half
4 tablespoons sour cream
dash of taco seasoning
1/4 teaspoon spicy mustard
1/4 tablespoon melted butter
1/2 tablespoon milk
2 slices Canadian bacon

directions:

Mix sour cream, taco seasoning, mustard, butter, and milk together and set aside.

Fry eggs,

Place sliced Canadian bacon on top of sliced pretzel.

Add eggs

Top with sauce

Taco Empanadas

Taco Empanadas

Ingredients

  • 1 1/2 cups flour (save a little for kneading)
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 1 egg
  • 1 tablespoons butter
  • for this recipe I would add 1 table spoon of the  taco seasoning to the dough

Filling:

  • 1/2 lb hamburger
  • 1 package taco seasoning
  • cilantro
  • 1 small onion
  • 2 couple of fresh tomatoes or a can of salsa, which ever you have on hand. I use these to cook the hamburger if it needs some liquid.
  • Jalapeno slices

Directions:
In a bowl, mix together the flour and salt. Cut in the butter.

Add the water, and egg mix until stiff

Knead the dough on a lightly floured surface until all flour has been incorporated into the dough and the dough is smooth.

Place the dough in plastic wrap or baggie and refrigerate for at least 1 hour.

Roll the dough out on a lightly flouring surface as thin as you can get it without tearing apart .

Cut out round circles about 5 inches in diameter. I use a good size cup.

Filling:

Add all the ingredients for filling and cook until hamburger meat is brown.

Take the dough cut outs and add filling and your favorite cheese. Add a slice of Jalapeno and close it up

Coat edges of dough with cold water and press together. Bush egg on top and place on baking dish.

Bake at 375°F for 15-20 minutes.

Today I will serve as main dish.

Top with sour cream. I added a small amount of taco seasoning to my sour cream.

Eggs Quesadilla

Eggs Quesadilla

2 flour tortillas  (homemade recipe)
2 scrambled eggs
sauteed Italian sausage with onion
Hash brown potatoes (homemade recipe)
Cheese – any kind will do

I like these kind of recipes. You can not go wrong. You can add whatever you want and as much as you want in it.

 

Take your flour tortillas and place in a heated skillet. Add grated cheese to both sides.
Add your Italian sausage mixture, make sure its warm.
Add eggs and place one tortilla on top of the other.

Top with salsa and serve

Homemade Pretzels

I never made before. You would normally use kosher salt for pretzels, but since I didn’t have any in the cabinet nor do I use much salt I used regular salt in this recipe and left the salt off the top of the pretzel.

This recipe made 8 pretzels. I eat 1 before I took the picture.

Ingredients

Directions

Combine the water, sugar and salt in a mixing bowl and add the yeast on top. Let it sit for 5 minutes you will see the mixture begin to foam. Add the flour and butter and mix well. Knead until the dough is smooth, approximately 4 to 5 minutes. Place the dough in a clean well oiled bowl and rub oil on dough. Cover with plastic wrap and sit in a warm place for one hour or until the dough has doubled in size.

Preheat the oven to 450 degrees. Lightly brush baking pan with the vegetable oil. Set aside.

Bring the 5 cups of water and the baking powder to a boil.

While the water is coming to a boil place dough on an oiled work surface and divide into 8 equal pieces. Roll each piece of dough into a 12-inch ropes. Shape anyway you like. Be creative. Place on sheet pan.

Take each pretzel and drop into the boiling water, for 30 seconds. Place them on the baking pan, coat the top of each pretzel with the egg. Bake about 12 to 14 minutes. They will be turn dark golden brown. let cool before serving.

2 cups left over Baked chicken (see recipe)
1 sauteed onions
1/2 cup chopped fresh mushrooms
1 – 8oz can Cream
4oz – milk
4 – Tablespoons  Powder coconut milk
Tony Chachere’s seasoning to taste
crushed red pepper to taste

Sauté 1 onions, and mushrooms in 1 -2 tablespoons olive oil until onions just start to brown

Chicken and Dumplings

Dumplings Ingredients:

2 – Cups flour
2 – Tablespoon Baking Powder
1 – Tablespoon salt
1/8 – Teaspoon Garlic
1/8 – Teaspoon white Pepper
1/2 – Teaspoon Chicken Bullion
1/4 – Teaspoon Paprika
1/4 – Teaspoon Dill Weed
1/4 – Cup Shorting
1 – Cup Milk

  1. Stir together flour, baking powder, salt, garlic, pepper, bullion, paprika and dill weed in medium size bowl. Cut in shorting until crumbly. Stir in milk to make a soft dough.
  2. Drop by spoonfuls into boiling stew.

Chicken Ingredients:
9 – Cups of Water
1 – Medium Whole Chicken
5 – Bay Leaves
1 – Large Carrot
3 – Medium Onions
1 – Tablespoon Chicken Bouillon
1/2 – Teaspoon Garlic
1/2 – Teaspoon white Pepper
1 – Teaspoon Paprika
1/2 – Teaspoon Dill Weed
1/2 Cup Milk
1 – Tablespoon Flour

Directions:

Cook chicken, on medium heat, in water with bay leaves.
When chicken is done pull off bones and put back into the water.
Add carrots, and onions cook until carrots and onions are soft.
Add all spices and bring to a boil.
Drop dumplings in. Cook for 10 minutes and turn over or stir.

When the inside of the dumplings are the consistency of a biscuit whisk milk and flour together and add to the pan. Let cook another for 5 minutes and serve.

Wheat toast

Add 2 roasted garlic cloves
Top with 3 thin slices of cheese

Pinch of Thyme
Pinch of Rosemary

Toast until golden brown.

Serve with soups and salads

Indigence:

Whole Wheat Bread
Butter
Garlic Powder
Dried Marjoram
Dried Thyme

This is what I had in the cabinet so this is what I used.

Directions:

Take whole wheat bread and spread butter, sprinkle garlic powder, sprinkle dried marjoram, and  dried thyme on both sides.

Put in toaster and toast until brown. Slice or crumble.

Whole Wheat Flour Tortillas -Seasoned

Directions

  1. In a large bowl, stir together 1 cup all-purpose flour, the whole wheat flour, and salt and all other seasonings. Add in the shortening mix by hand until the mixture is the texture of oatmeal. Pour in the boiling water. Mix until all of the water is evenly incorporated. Sprinkle with a bit of additional flour, and knead until the dough does not stick to your fingers. The dough should be smooth.flour tortillas
  2. Make balls the size of golf balls. Place them on a smooth surface, and cover with a cloth. Let stand for at least 1 hour, or up to 8 hours.
  3. Heat a griddle or large frying pan over high heat.tortillas

    tortillasTake you Kitchen Aid with the pasta attachment with the smooth rollers. Put it on the number 1 setting for thickness. flatten the tortilla ball and run it through the rollers. Fold the  tortilla in half put setting on 5 and run through again. Fol the tortilla in half, put setting on 1 and run through one more time. (You can choose your preferred thinness.)

  4.  Fry one at a time. Place on the griddle for 10 seconds, as soon as you see a bubble on the top, flip the tortilla over. Let it cook for about 30 seconds, then flip and cook the other side for another 30 seconds.They don’t have to look perfect. :0) remember they are homemade

Medicinal usage in Islam

The prophet Muhammad PBUH said that ‘This black cumin is healing for all diseases except Death.’ The prophet recommended that Muslims take five or seven seeds and crush them (mix the powder with oil) and drop the resulting mixture into both nostrils. (Book #71, Hadith #591)
