Wasabi Burgers

 

wasabi sour cream

 

1lb hamburger
2 slices whole wheat bread or crackers
2 eggs
1/2 cup chopped onion
2 tablespoon wasabi

Sauce
1 tablespoons wasabi
2 tablespoon sour cream
A dash of mustard

Mix hamburger, whole wheat bread or crackers, eggs, onions, and wasabi in mixing bowl. Make patties and cook to desired temperature.

For the sauce:

add wasabi , sour cream, and mustard.

 

Build your burger with your favorite toppings.

Italian Sausage Meatball Subs

Italian Sausage Meatball Subs

Ingredient

1 small onion diced
Olive oil
1 small Can Salsa
Fennel seed
16 oz you favorite Pizza sauce or homemade

1/4 lb of Italian sausage
1 lb hamburger meat
1 egg
1 slice of wheat bread
Panko seasoned bread crumbs
Garlic powder

2 tablespoons Worcestershire sauce

Directions:
Sauté onions and fennel seed for about 10 minutes on low add salsa
Cook for another 15 minutes
Add sauce and simmer for 30 minutes

While the sauce is cooking make meatballs – 12
Brown meatballs in a skillet on both sides
Add Worcestershire sauce while browning

Add meatballs to the sauce
You can continue on stove or in crock pot
On slow time varies

Italian Sausage Burgers

I would normally use Worcestershire Sauce to cook my burgers, but I didn’t have any. So I made my own sauce. This is what I had in the cabinet tonight. 

Sauce: Ingredients:

1/4 – Cup Soy Sauce
1 – Tablespoon White Vinegar
1/2 – Tablespoon your favorite Mustard
1/2 – Teaspoon Curry Powder
1 – Teaspoon Garlic Powder
1 – Teaspoon Sugar
1/4 – Teaspoon White Pepper
1/8 – Teaspoon Cinnamon ( May sound weird but it works)

  Hamburgers Ingredients:

1 – Pound Ground Hamburger
1/2 – Pound of Italian Sausage
2 – Eggs
1 – Slice of Wheat Toast
1/2 cup – Panko Seasoned bread crumbs add more if needed
1/2 – Teaspoon White Pepper
1 – Tablespoon Chili Powder
1/2 – Tablespoon Onion Powder
1/2 – Teaspoon Garlic Powder

If you like onions you will also need 1 – Large onion and 1 – Tablespoon of Olive Oil.

Soy Sauce

Directions:

Whisk together all ingredients for Sauce set aside.

Mix all ingredients for burgers, make into hamburger patties.If sausage in in a casing take it out.

Put onions with olive oil in skillet and saute for about 2 minutes. Add a tablespoon of sauce and continue cooking for about 3 minutes. Make sure you stir while cooking.

Add meat patties. Cook  until skillet is real hot.

Add sauce to burgers to keep from getting dry. Turn over cook and add more sauce. Cook until desired temperature.

Put hamburger buns in toaster. Put roasted garlic on one side and cheese you prefer on the other and brown

Chicken and Dumplings

Dumplings Ingredients:

2 – Cups flour
2 – Tablespoon Baking Powder
1 – Tablespoon salt
1/8 – Teaspoon Garlic
1/8 – Teaspoon white Pepper
1/2 – Teaspoon Chicken Bullion
1/4 – Teaspoon Paprika
1/4 – Teaspoon Dill Weed
1/4 – Cup Shorting
1 – Cup Milk

  1. Stir together flour, baking powder, salt, garlic, pepper, bullion, paprika and dill weed in medium size bowl. Cut in shorting until crumbly. Stir in milk to make a soft dough.
  2. Drop by spoonfuls into boiling stew.

Chicken Ingredients:
9 – Cups of Water
1 – Medium Whole Chicken
5 – Bay Leaves
1 – Large Carrot
3 – Medium Onions
1 – Tablespoon Chicken Bouillon
1/2 – Teaspoon Garlic
1/2 – Teaspoon white Pepper
1 – Teaspoon Paprika
1/2 – Teaspoon Dill Weed
1/2 Cup Milk
1 – Tablespoon Flour

Directions:

Cook chicken, on medium heat, in water with bay leaves.
When chicken is done pull off bones and put back into the water.
Add carrots, and onions cook until carrots and onions are soft.
Add all spices and bring to a boil.
Drop dumplings in. Cook for 10 minutes and turn over or stir.

When the inside of the dumplings are the consistency of a biscuit whisk milk and flour together and add to the pan. Let cook another for 5 minutes and serve.

Chicken Pizza Quesadillas

Chicken Pizza Quesadillas

I had some leftover chicken so this is what I came up with. It’s quick and easy.

Ingredients:

Flour Tortillas
Butter
2 – Tablespoons Pizza Sauce
Handful of Cheese – whatever kind you like
1 – Cooked Chicken Breast. I had some leftover chicken.
2 – Tablespoons Roasted Garlic, Tomato, Onion
Jalapeno Pepper to taste

You can use whatever pizza topping you like best.

Chicken Pizza Quesadillas

Directions:

Butter each side of the tortillas.
Place tortillas in skillet. Cook for 30 seconds and flip over.

Top with cheese, and pizza sauce.

Add chicken and roasted garlic mixture.
Add more cheese and Jalapenos.

Place the other tortilla on top
Cook on both sides until tortillas have browned and cheese it melted.

I almost forgot the jalapenos so I placed them on top.

Spicy Chicken and Refried Bean Soup

Ingredient:

1 whole Chicken
9 cups of water
5 bay Leaves

veggies1 Large Onion sliced
2 Good Size Carrots diced bite size
2 Medium Tomatoes

Spices:

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried Rosemary
1/4 teaspoon dried Thyme
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 Tablespoon chicken bouillon
1 teaspoon white pepper

2 Cups of Crushed Tortilla Chips
8 0z Cream
serve with graded cheese to top of choice

Spicy Chicken and Refried Bean Soup

Cook Chicken and bay leaves in water. When chicken is cooked through take chicken off bone and take out bay leaves.

Add next 3 Ingredients cook for 15 minutes (carrot, onions, tomatoes)
add all spices and cook for another 20 minutes on medium.

Add chips, cream and cook another 5 minutes. Top with graded cheese and serve.

Chicken Fettucine Alfredo

Chicken Fettucine Alfredo

Ingredients

  • 1 pound dried fettucine
  • 2 chopped chicken breast
  • 6 tablespoons unsalted butter
  • 1 medium onion
  • 1 garlic bulb minced
  • 1 head of broccoli
  • 1 cup heavy cream
  • 1 cup finely grated Parmesan
  • 1/2 teaspoon chicken bouillon
  • 1/4 teaspoon white pepper
  • Tony Chachere’s creole seasoning to taste.
  • thinly sliced carrots
  • pinch of crushed red pepper to taste.

Fettucine Alfredo

Directions

Cook the fettucine in a pot of rapidly boiling salted water until al dente. Drain in a colander, reserving 1/4 cup of the pasta cooking liquid.

While the pasta is cooking, melt the butter in a medium saucepan over medium-high heat. Add chicken, broccoli, garlic and onions saute until tender. Add heavy cream and bring to a boil. Cook until sauce has reduced slightly, about 5 minutes. Remove from the heat.

Return the pasta to the pot it was cooked in, set over medium-high heat along with the reserved cooking liquid. Add the butter-cream mixture and half of the Parmesan and toss to combine thoroughly. Season with salt and white pepper, chicken bouillon, and Tony Chachere’s creole seasoning to taste. Sprinkle with remaining Parmesan and garnish with slicked carrots and crushed red pepper. Serve immediately.
